Ingredients

Scale

Rice and Beef Mixture

  • 1 cup uncooked long-grain white rice
  • 1 lb ground beef
  • 1 small onion, diced
  • 4 garlic cloves, minced
  • 3 cups low sodium beef broth
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1 tbsp butter (for onion)

Cheese Sauce

  • 2 tbsp butter
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese

Garnish

  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  1. Cook Onion: Melt 1 tablespoon of butter in a large skillet over medium heat. Add the diced onion and cook for 3 to 4 minutes until softened and translucent.
  2. Brown the Beef: Add the ground beef to the skillet with the onion. Break the beef apart with a spatula and cook until it changes color and is fully browned. Drain any excess fat from the pan.
  3. Garlic Time: Stir in the minced garlic and cook for about 1 minute until fragrant, stirring frequently to avoid burning.
  4. Mix in Rice and Broth: Add the uncooked rice, beef broth, Italian seasoning, salt, and pepper to the skillet. Stir well to combine all ingredients.
  5. Simmer Away: Increase the heat to bring the mixture to a boil. Then reduce heat to low, cover with a lid, and let it simmer for 18 to 20 minutes or until the rice has absorbed the broth and is tender.
  6. Create Cheese Sauce: While the rice cooks, melt 2 tablespoons of butter in a small saucepan over low heat. Slowly stir in the Parmesan, cheddar cheese, and milk. Continue stirring until the sauce is smooth and creamy.
  7. Blend Everything Together: Pour the cheese sauce into the skillet with the cooked beef and rice mixture. Stir thoroughly to combine and coat everything evenly.
  8. Final Touch: Cook uncovered for 2 to 3 minutes to allow the flavors to meld. Sprinkle chopped fresh parsley on top if desired, then serve warm.

Notes

  • Use low sodium beef broth to better control the salt content.
  • Drain excess fat after browning beef to keep the dish less greasy.
  • For a creamier texture, use whole milk or substitute with half-and-half.
  • Fresh parsley adds a nice color contrast and fresh flavor, but can be omitted.
  • To make this dish gluten-free, ensure that the beef broth and Italian seasoning do not contain gluten additives.
