Ingredients

Scale

Salmon Bites

  • 1 lb fresh, skinless salmon fillets, cut into 1-inch cubes
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Vegetable oil (for frying)

Bang Bang Sauce

  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tbsp sriracha (adjust to taste)
  • 1 tbsp honey
  • 1 tbsp lime juice

Instructions

  1. Prepare the Salmon: Cut the salmon into 1-inch cubes and pat them dry thoroughly with paper towels to ensure the coating sticks properly and the salmon crisps well during frying.
  2. Set up the Breading Station: Arrange three shallow bowls—one with all-purpose flour, one with beaten eggs, and one with panko breadcrumbs mixed with garlic powder, onion powder, paprika, salt, and pepper.
  3. Coat the Salmon Bites: Dredge each salmon cube first in flour, then dip into the eggs, and finally roll in the seasoned panko mixture until fully coated. Set the coated pieces aside on a plate.
  4. Heat the Oil: Pour about 1 inch of vegetable oil into a skillet and heat over medium heat until hot enough for frying (around 350°F/175°C). You can test by dropping a breadcrumb in the oil; it should sizzle immediately.
  5. Fry the Salmon: Fry the salmon bites in batches to avoid overcrowding, cooking each side for 2-3 minutes until the crust is golden brown and crispy and the salmon is cooked through. Remove with a slotted spoon and drain on paper towels.
  6. Prepare the Bang Bang Sauce: In a small bowl, mix together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth and well combined.
  7. Toss and Serve: Drizzle the Bang Bang sauce generously over the crispy salmon bites or toss them gently in the sauce. Serve immediately while hot and crunchy.

Notes

  • Ensure the salmon cubes are well dried to achieve the crispiest coating.
  • Adjust sriracha in the sauce to control the spice level.
  • Non-stick or cast-iron skillet works best for frying.
  • Serve with a side of fresh lime wedges or a simple green salad for a complete appetizer.
  • Make sure not to overcrowd the pan to maintain oil temperature and crispiness.
