Instructions

  1. In a medium saucepan, bring almond milk to a gentle boil over medium heat.
  2. Stir in oats, mashed banana, cinnamon, salt, and maple syrup.
  3. Reduce heat and simmer for 8–10 minutes, stirring occasionally, until oats are soft and creamy.
  4. Remove from heat and stir in vanilla extract.
  5. Divide oatmeal into serving bowls.
  6. Top with sliced banana, toasted pecans, a drizzle of maple syrup, and a pinch of cinnamon.
