- 1 banana, thinly sliced (for topping)
- 1/3 cup melted coconut oil or butter
- 1/2 cup maple syrup or honey
- 2 large eggs
- 1/4 cup milk (dairy or plant-based)
- 1 teaspoon vanilla extract
- 1 1/2 cups rolled oats
- 1 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 3/4 cup chocolate chips (plus extra for topping)
- Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
- In a large bowl, mix mashed bananas, melted coconut oil, maple syrup, eggs, milk, and vanilla until smooth.
- Stir in oats, flour, baking soda, baking powder, cinnamon, and salt until combined.
- Fold in chocolate chips gently.
- Pour batter into the prepared loaf pan. Top with banana slices and extra chocolate chips.
- Bake for 45–55 minutes, or until a toothpick comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
