Banana Chocolate Chip Oat Bread

Moist and hearty banana bread made with rolled oats, melted chocolate chips, and fresh banana slices on top—a cozy twist on a classic favorite.

  • 2 ripe bananas, mashed
  • 1 banana, thinly sliced (for topping)
  • 1/3 cup melted coconut oil or butter
  • 1/2 cup maple syrup or honey
  • 2 large eggs
  • 1/4 cup milk (dairy or plant-based)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups rolled oats
  • 1 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3/4 cup chocolate chips (plus extra for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a large bowl, mix mashed bananas, melted coconut oil, maple syrup, eggs, milk, and vanilla until smooth.
  3. Stir in oats, flour, baking soda, baking powder, cinnamon, and salt until combined.
  4. Fold in chocolate chips gently.
  5. Pour batter into the prepared loaf pan. Top with banana slices and extra chocolate chips.
  6. Bake for 45–55 minutes, or until a toothpick comes out clean.
  7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use very ripe bananas for the best flavor and moisture.
  • You can substitute gluten-free oats and flour to make this gluten-free.
  • Adjust the sweetness by choosing between honey or maple syrup.
