- 4 cod fillets (about 6 oz each)
- 2 tbsp olive oil
- 1/2 cup cherry tomatoes or canned diced tomatoes
- 2 garlic cloves, minced
- 1/4 cup breadcrumbs (panko or regular)
- 1/4 cup grated Parmesan cheese
- 1 tbsp tomato paste
- 1/2 tsp smoked paprika
- 1/4 tsp red pepper flakes (optional)
- Salt and black pepper, to taste
- 1 tbsp fresh parsley, chopped (for garnish)
- Preheat oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
- In a food processor, blend cherry tomatoes, garlic, olive oil, tomato paste, paprika, red pepper flakes, breadcrumbs, and Parmesan until a coarse paste forms. Season with salt and pepper.
- Pat cod fillets dry and place them in the prepared baking dish.
- Spoon and spread the tomato-garlic mixture evenly over each fillet, covering the top completely.
- Bake for 15–18 minutes, or until the fish flakes easily with a fork and the topping is slightly golden and crisp.
- Garnish with chopped parsley and serve hot with rice, couscous, or a green salad.
