Baked Cod with Tomato Garlic Crust

Flaky, tender cod fillets baked under a vibrant crust of tomatoes, garlic, and breadcrumbs—an easy and flavorful seafood dish that’s both rustic and refined.

  • 4 cod fillets (about 6 oz each)
  • 2 tbsp olive oil
  • 1/2 cup cherry tomatoes or canned diced tomatoes
  • 2 garlic cloves, minced
  • 1/4 cup breadcrumbs (panko or regular)
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp tomato paste
  • 1/2 tsp smoked paprika
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
  2. In a food processor, blend cherry tomatoes, garlic, olive oil, tomato paste, paprika, red pepper flakes, breadcrumbs, and Parmesan until a coarse paste forms. Season with salt and pepper.
  3. Pat cod fillets dry and place them in the prepared baking dish.
  4. Spoon and spread the tomato-garlic mixture evenly over each fillet, covering the top completely.
  5. Bake for 15–18 minutes, or until the fish flakes easily with a fork and the topping is slightly golden and crisp.
  6. Garnish with chopped parsley and serve hot with rice, couscous, or a green salad.

Notes

  • Use fresh cod for best texture and flavor.
  • Substitute Parmesan with nutritional yeast for a dairy-free version.
  • This topping also works well on haddock or halibut.
