Ingredients

Scale

Chicken

  • 2 boneless, skinless chicken breasts
  • Salt & pepper, to taste
  • Olive oil, splash for searing

Filling

  • 1 honeycrisp apple, cored and thinly sliced
  • 1 wedge of brie cheese, sliced

Glaze

  • 2 tablespoons maple syrup
  • 1 teaspoon dijon mustard
  • ¼ teaspoon dried thyme
  • 1 garlic clove, minced

Instructions

  1. Prepare the glaze: In a small bowl, whisk together the maple syrup, dijon mustard, dried thyme, and minced garlic until fully combined. Set the glaze aside for later use.
  2. Preheat the oven: Set your oven temperature to 400 degrees Fahrenheit to get it ready for baking the stuffed chicken.
  3. Prepare the chicken breasts: Lay the chicken breasts flat on a cutting board and carefully cut a slit into each one, about ¾ of the way through to create a pocket. Season both sides generously with salt and pepper.
  4. Sear the chicken: Heat a large cast iron skillet over medium-high heat and add a splash of olive oil. Once the oil is hot, place the chicken breasts in the pan and sear them for 2-3 minutes on each side until they develop a nice golden crust. Remove the chicken from the pan.
  5. Stuff the chicken: Carefully fill each chicken breast pocket with the thinly sliced honeycrisp apples and slices of brie cheese. If desired, secure the openings with toothpicks to prevent the filling from spilling out during baking.
  6. Apply glaze and bake: Return the stuffed chicken breasts to the cast iron skillet and brush them generously with the prepared glaze. Place the skillet in the preheated oven and bake for 20-22 minutes, or until the chicken is fully cooked with an internal temperature of 165°F.
  7. Serve: Once baked, remove the chicken breasts from the oven and serve immediately, enjoying the melty brie with sweet apple filling and flavorful glaze.

Notes

  • You can use toothpicks to secure the chicken pockets to keep the filling intact during cooking.
  • Honeycrisp apples are recommended for their sweet-tart flavor and firm texture, but any sweet apple variety will work.
  • If you don’t have a cast iron skillet, use any oven-safe skillet or pan for searing and baking.
  • Ensure the chicken reaches an internal temperature of 165°F for safe consumption.
  • For a dairy-free version, substitute brie with a plant-based cheese alternative.
